The ideal method to cook your venison backstrap is to reverse sear it. A reverse-seared venison backstrap will be first slow cooked inside an oven (or smoker) until it’s around 15 ° below the temperatures, then cooked with a very high temperature sear inside a pan, that creates a lovely exterior crust. This is a much quicker way to get your desired temperature, without cooking the meat too long. Also, the reverse searing technique helps to dry the exterior of the meat inside the oven, creating a thin outer coating that’s ideal for quick and easy searing on hot surfaces and ensuring a golden brown crust. Garlic Powder

1 cup of blueberries (frozen or fresh, both fresh or frozen, either)

1/4 Maple Syrup

2 Tablespoons of bourbon (more should you prefer strong whiskey flavour)
