The absolute best way to cook your backstrap venison is to reverse sear it. Reverse seared venison backstrap is then cooked slowly inside an oven (or smoker) until it’s 15 degrees lower than your temperatures, then done with a hot sear in a pan to form a nice outer crust. This is a much easier way to reach your temperature goal without undercooking your meat. Also, the reverse searing method dries out the surface of the meat in the oven. This creates the appearance of a fine outer coating. This is suitable for a quick and easy searing process on a hot surface and ensures the crust is golden brown. Include a tasty blueberry Bourbon pan sauce to the mix for one of the tastiest ways to enjoy your deer’s flesh.

50/50 mix of Kosher salt and black pepper

Garlic Powder

1 cup of blueberries (frozen or fresh, both fine)

1/4 Maple Syrup

2 Tablespoons of Bourbon (more should you prefer an intense whiskey flavor)
