Yes, we know it’s tasty as a standalone portion of meat. But every now and then it’s nice to add some spice. What better way to prepare that than stuffing it full of cream cheese, jalapenos, as well as wrapping it in bacon?? ?

INGREDIENTS:

* Deer backstrap – pounded flat

* Bacon-thinly sliced

* Cream cheese

* Garlic powder is not salt

* Salt and pepper

* Use the steak seasoning of your choice

* Mushrooms

* Jalapenos are cut into small pieces

* Onion, cut in tiny slivers

* Toothpicks

DIRECTIONS:

1. By using a meat mallet smash meat to flatten it. (Butterflying the meat using the knife initially speeds up process.)

2. Dust the backstrap with garlic powder, salt for seasoning as well as kosher salt and pepper.

3. Spread cream cheese over one side of meat, sprinkle on onions, jalapenos, and mushrooms. Add some shredded pepperjack if you’d like.

4. Roll meat and wrap with bacon & secure with toothpicks. Place in glass or ceramic baking dish.

5. Grill or bake until bacon is done. (400degF for 30 mins in oven). Set to broil to crisp bacon. Grill over medium high heat.

6. Remove from the oven and allow to sit for 10 minutes before slicing – if you can keep it that long!
