Reverse Seared Backstrap with Blueberry Bourbon Sauce

The best method to cook venison backstrap is to reverse searing it. Backstraps of venison that have been reverse seared are first slow cooked within an oven (or smoker) until it’s 15 degrees less than the temperatures, and finally cooked with a very high temperature sear inside a pan, for a beautiful outer crust. This is a more efficient way of reaching your desired temperature, without cooking the meat too long. Additionally, the reverse searing technique dries the surface of the meat inside the oven, forming a thin outer coating that’s perfect for quick cooking on a hot surface and ensuring the crust is golden brown. In addition, add some delicious blueberry bourbon pan sauce to the mix to create the most delicious way to serve deer meat.

1 Venison Backstrap

50/50 mix of Kosher salt and black pepper

Garlic Powder

1 cup of blueberries (frozen or fresh, either fresh or frozen, either)

1/4 Maple Syrup

2 Tablespoons of Bourbon (more If you like strong whiskey flavour)
