Sure, this backstrap venison is tasty as a standalone piece of meat, but occasionally it’s good to spice things up. What better way to prepare it than stuffing it with jalapenos and cream cheese and then wrapping it in bacon? ?
INGREDIENTS:
* Deer backstraps – – pounded smooth
* Bacon – thin sliced
* Cream cheese
* Garlic powder. Not salt
* Salt and pepper
* Use the steak seasoning of your selection
* Mushrooms
* Jalapenos Sliced into tiny slivers
* Onion – sliced in tiny slivers
* Toothpicks
DIRECTIONS:
1. Use a meat mallet to press meat into a flat place. (Butterflying meat using a knife first speeds up process.)
2. Sprinkle the backstraps with garlic powder, salt for seasoning and pepper. Sprinkle kosher salt.
3. Spread cream cheese onto the other side of your meat. sprinkle with jalapenos, onions and mushrooms. If you want, add shredded pepperjack should you like.
4. Roll meat and wrap with bacon. Secure it with toothpicks. Place in glass or ceramic baking dish.
5. Bake or grill until bacon is cooked. (400degF for 30 mins in oven). Broil until crisp bacon. Grill over medium high heat.
6. Remove from heat & let cool for 10 minutes prior to slicing – if you can keep it that long!
